If you are looking for the ultimate gift for a chocoholic, as well as a box of our fabulous chocolates, why not treat them (or yourself) to one of our New Chocolate Courses. These are run on a small group or individual basis and can be booked on any mutually convenient date. All our courses are intensely practical, with instruction and explanation given throughout. You can opt for a tutored tasting as part of the course if you wish. All our courses cover how to temper couverture (the high cocoa butter chocolate used in producing fine chocolates)to produce shiny chocolate with a good snap to it. You will also learn how to make and flavour ganache - the filling for truffles - and how to hand-roll, pipe and mould it into chocolates. You will also learn different decoration techniques. Each course is tailor made to suit the participants so you can choose what other types of chocolates you would like to make, or just stick to ganache. The choices include marzipans, fudges, caramel, creams, praline, and bars. How much you cover depends on the length of time you wish to spend. Day courses, two day courses and half day courses are available, with lunch included on the full day courses and optional on the half day course. Please enquire for more details. This is also available as a corporate team building exercise.

dipping strawberries

It's english strawberry season. As the weather warms up why not serve a platter of fresh strawberries with some warm chocolate to dip them in! Our chocolate buttons work well for this. To melt them boil a saucepan of water and remove from the heat. Take a heatproof bowl and sit it in the saucepan. Choose a bowl that will fit on the rim without coming into contact with the surface of the water. Place the chocolate buttons in the bowl and leave them to melt, stirring occasionally. Alternatively you can use a microwave on medium power to melt the buttons. Heat for 30 seconds initially then stir and repeat. It usually takes about three minutes to melt up to 500g of buttons in an 800w microwave. Keep checking and stirring reducing the time between checking as the chocolate begins to melt. If you wish to melt white chocolate use 50% power for safety, it will take a little longer but this chocolate burns easily. If you prefer to dip your strawberries in chocolate and allow the chocolate to set before you serve them, you may like to melt two thirds of your chocolate, and then add one third solid buttons. Stir really well until all the buttons melt without further warming. Dip your rinsed and dried (this helps the chocolate to stick)strawberries in it and place them on baking paper to set. you can roll them in sugar beads or coconut or chopped nuts as well if you wish. The chocolate on the strawberries should set without refrigeration but you can put them in a fridge for about 10 minutes to help them along if you wish. if you leave them longer you will get condensation on the chocolate.

Looking for Something Different to Do? Why not try our Chocolate Parties for Adults!

Our children’s chocolate parties have proved so successful that we have decided to put all those adults longing to take part out of their misery and launch our chocolate-making parties for adults!

Based on the same idea as the children’s parties, you will make your own box of chocolates, with a range of fillings including alcoholic truffles if you wish, paint your own masterpiece in chocolate, and enjoy a luxurious chocolate fondue or chocolate tasting if you prefer. You can also order a finger buffet and a celebration cake if you wish. You could book one for your club, as a hen party, a birthday party, or just get a group of friends together....

Our History of Chocolate Demonstrations are proving very popular and are now booking well into 2009. We have entertained a variety of clubs and societies in this way, from WI's to the Cambridge Food and Wine Society, who also ordered a savoury chocolate sausage plait and a chocolate cake for their post-demonstration buffet.
